Green Bean Bundles, a Favorite Side Dish

There are many variations of Green Bean Bundles floating out there on the internet, but my recipe is much more simple (only three ingredients!) and uses ingredients that you might already have on hand in your pantry. Let’s hear it for cans! This savory and delicious favorite came to me from my wonderful mother-in-law.

They’re made with bacon, so Green Bean Bundles are actually a favorite side dish in my family any time of year, but we especially enjoy them at holiday dinners when a ham or turkey is on the table – Easter, Christmas, Thanksgiving, etc. They go well with other complimentary sides like mashed potatoes, sweet potatoes and even rice.

Don’t be surprised if you find people in the kitchen after dinner is over, eating these bundles right out of the pan…

Here’s the recipe:

GREEN BEAN BUNDLES

1 pound bacon
3 cans whole green beans
2 cans Campbell’s Beef Consomme Soup
Toothpicks

DIRECTIONS:

1. Drain the green beans.

2. Open the package of bacon and cut right down the middle with a pair of kitchen scissors. Take about 4-6 green beans (depending on their thickness) and wrap in a slice of bacon. Secure with a toothpick and lay in a 9×13 baking dish. Continue doing this until your dish is full, or all the bacon has been used up.

3. Pour both cans of soup on top of the green beans. Cover with plastic wrap and marinate overnight.

4. Next day, uncover and bake at 350 for 30 minutes. If you’d like to crisp the bacon a little, turn the broiler on and cook for an additional 5 minutes or until the bacon begins to sizzle.

    Very interested in this recipe! My kids are not huge fans of green beans but when I make my “bacon beans” dish (which is different from yours), they gobble it up! I will be trying this this week…it looks fun 🙂 Thanks for the recipe!!

    These look delicious!! We grow our own and this would be a perfect new way to make them. Plus I think I could get my husband to eat anything that is wrapped in bacon 🙂
